Arctic char in foil

Caught fresh from a Senja stream, cooked over coals. The classic Norwegian friluftsliv meal.

Ingredients

  • 2 small char (300g each)
  • Lemon
  • Butter
  • Dill
  • Salt
  • Heavy aluminum foil

Steps

  1. Gut and rinse fish
  2. Salt cavity
  3. Stuff with lemon, butter, dill
  4. Wrap tight in two layers of foil
  5. Place on coals 12 min, flip once

🏕 Tent tip

Use medium-orange coals, not white-hot ones. Char skin should crisp without scorching.
